Kaiserschmarren

When I was a kid, I used to visit my grandma on school vacations. Her sister lived around the corner in the same condominium development, and I'd always go over there one morning to have breakfast with my great-aunt and uncle. My all-time favorite dish was one that was supposed to be dessert for four to six people, but skinny little me and my adored Uncle Fritz got through the whole mountain of it almost on our own (Aunt Trude didn't eat enough to really even count). It translates as "mess fit for an emperor," and I couldn't agree more!
 
Recipes

Kaiserschmarren
Ingredients:
6 eggs
1-1/2 cups flour
1-1/2 cups milk
< cup sugar
= tsp. salt
Raisins
1 cube (1/4 lb.) butter
1-1/2 tsp. vanilla

How to make this wonderful dish:
Separate the eggs and beat the whites. Beat the egg yolks a little bit (until lighter in color), then add flour (all dry ingredients) mixture and milk (the other wet ingredients) mixture a little at a time to avoid splattering. Alternate milk and flour-don't add it all at once!!
Melt butter in a (VERY HOT) griddle.
Carefully fold some of the yolk mixture into the whites, and then dump the whites into the yolk mixture. Fold carefully until well-mixed.
Be sure the raisins aren't sticking together, and then add them carefully.
Pour into griddle. Turn over in parts (makes more crust that way, and believe me, you want lots of crust!). Tear with two forks and then add some sugar over the top and brown for another few moments before serving.
