Ingredients:
1 1/4 cups water 315 mL
1 1/2 cups uncooked instant 375 mL
brown rice
2 tbsp light margarine 30 mL
2 tbsp low-sodium soy sauce 30 mL
2 cups Butterball turkey 500 mL
leftovers, chopped
1/2 cup frozen green peas 125 mL
1/2 cup shredded carrot 125 mL
1/4 cup sliced green onions 62 mL
1/4 cup chopped green pepper 62 mL
1/4 tsp black pepper 1 mL
1 egg, lightly beaten 1
Directions:
Cook rice as per package directions omitting salt and fat.
Melt margarine in medium saucepan over low heat. Stir in soy sauce. Add turkey; cover and heat for 5 minutes. Add peas, carrot, onion, green pepper and black pepper. Cook for 3 minutes over medium heat. Stir in egg and cook for 1 minute or until egg is done, stirring constantly.
Combine rice and turkey mixture; stir well. Serve warm. Yield: 5 servings
